Indulge in French Elephant Ears

Le Palmier, often called French Elephant Ears, distils French baking: palm-shaped, buttery pastries with a crisp caramelized crust and flaky layers. This article explains why Palmiers are classic puff-pastry cookies, how to enjoy them at De Ma Vie Bakery in Falls Church, VA, and covers history, pairings, and ordering.

What Makes Le Palmier a Classic French Puff Pastry Cookie?

Le Palmier relies on laminated dough coated with sugar that caramelizes, producing delicate, flaky layers with a crunchy, sweet exterior and buttery center.

What ingredients create the crisp, caramelized texture of Palmiers?

Puff pastry and granulated sugar create the signature texture: layers of dough and butter lift and flake while sugar caramelizes to form a crunchy shell.

Puff pastry is made by lamination (for example, the French envelope method), enclosing a block of fat and folding repeatedly to build thin layers.

Puff Pastry: French Method & Ingredients

This review focuses on puff pastry and fermented pastry. Alternatively, in the French or envelope method, a rectangular block of fat is placed on a dough sheet and enclosed by folding the dough over it.

How does the traditional French baking process craft Le Palmier's flaky layers?

Precise rolling and folding produce thin, even layers. Bakers roll, sugar the dough, shape, slice and bake at high heat so steam lifts the layers while sugar quickly caramelizes, deepening texture and flavor.

Lamination and sugar use evolved alongside changes in sugar trade and availability.

French Puff Pastry: Historical Lamination

French puff paste lamination is a key technique. The rise in sugar prices toward the end of the 17th century enabled the rising wealthy merchant dynasties in the prosperous cities of Vienna and Paris to trade in sugar, which in turn led to the development of more elaborate pastries.

I have driven by De Ma Vie countless times since the sign first went up, and ever since they opened, I’ve been meaning to stop in. Today, I somehow found myself with a few extra minutes AND wasn’t running late to anything, so clearly, it was finally time. I stopped in just to see what kinds of pastries and baked goods they had and ended up having such a lovely and unexpected experience. I was helped by the father of the woman who runs the bakery (at least I believe that’s the family connection!). He patiently told me about the different pastries and treats, and as we talked, I learned that he was simply there helping out. Oh, and he also happens to be a trained orthopedic surgeon and researcher. Because apparently that’s who you casually meet while deciding which pastry you need. He was warm, kind, and interesting, and the whole interaction just felt authentic. Those kinds of experiences seem increasingly rare, and I really appreciated it. I’ve already enjoyed the rice pudding, which he topped with honey and pistachios because, as he explained, his daughter says you should always have it that way. His daughter is correct. It was great. I came home with several other things to try, all of which look fantastic. The pumpkin cheesecake is currently staring me down and will probably not survive the evening. I’ll definitely be back soon. I still need to try the soups he told me about, and hopefully next time I’ll get to meet his daughter too. Such a warm, charming first visit. I’m very glad I finally stopped in.

The croissant was SO good! Extremely flaky, fresh and difficult to not eat super fast. The soup was very good and I highly recommend it. Obviously not canned and the chicken was very good in it. It was a good portion and filling. The furniture and decor is not fancy, but I’m sure it will come along in time. Also it’s very clean. It’s right across the street from the Westin so there’s no excuse to not have a great breakfast here. Plenty of parking too.
