Higher-butterfat butter contains proportionally less water. That can affect tenderness, spread and lamination, but the exact percentage should be taken from the package rather than assumed.

Cultured flavor

Cultured butter is made with bacterial cultures before churning, creating tangier or more complex flavor. Not all French butter is cultured, and cultured butter is also produced elsewhere.

For laminated dough

Choose a butter that stays pliable when cool and work within a temperature range where dough and butter have similar firmness. Technique usually matters more than nationality.
